Cowgirl Turkey Burgers
1 lb. ground turkey
Med onion, sliced
4 T barbecue sauce
4 slices pepper jack cheese (or cheddar)
Green leaf lettuce
4 onion buns
Form turkey into 4 patties & brown in nonstick frying pan with sliced onions until golden brown on both sides and cooked thoroughly. (No pink inside!)
Lay cheese on top of burgers and move to a plate. Mix barbecue sauce and caramelized onions together coating all the onions. (This stuff is delicious!) My inspiration for today’s adventure in the kitchen is this California Roll from a sushi place near where I live. Cali Rolls (with avocado, imitation crab sticks and cucumber) are a tasty and inexpensive lunch option when I’m in a hurry. Depending on the restaurant and the size of the roll they’re usually priced under $2.00. If the roll is smaller it may take two for a meal but that’s still pretty cheap!
I have to admit, I’m not the world’s biggest seaweed fan. I’ve come to appreciate it but if it’s too strong smelling or too sticky I’ll pick it [ ... ]

For a while I’ve been thinking of getting a new nonstick frying pan but have been putting it off because a friend told me not to buy nonstick pans because of the gasses they produce while cooking. Well, I’ve given it a try but have to admit I HATE cooking in pans that food sticks to. Last week I tried cooking hash browns in an iron pan and it was agony. The hash browns stuck to the bottom of the pan like lovers that hadn’t seen each other in a loooong time. Seriously.

This is the REAL stuff made with real butter and real cheese. It is not for wimpy eaters. I made this Mac & Cheese for a potluck we had at work a few days ago and everyone LOVED it. I loved having so many people come find me to say they liked it. It’s a recipe I remembered making with my mom while growing up. Mom used to make it in a big pot that could be put in an oven but I use the foil pans you get from grocery stores when it’s something I’m talking to work.
