Old Fashioned Date Bars

To be honest, I didn’t know if I actually even liked dates until I tried these data bars for the first time. It’s a recipe from a family friend of one of my besties and let me tell you… it is goooood. I love these things!

Old Fashioned Date Bars

1/2 c. Oil
1 c. Brown sugar, firmly packed
2 eggs
1/2 t. Vanilla
3/4 c. Flour
1/4 t. Baking powder
1/4 t. Salt
1/2 c. Chopped nuts
1 c. Chopped dates, firmly packed

Heat oven to 350 degrees. Mix oil and brown sugar. Add eggs and vanilla and beat well. Add dry ingredients to mixture. Stir in nuts & dates. Put in oiled 8x8x2 (think it’s 8x16x2 cuz of # bars) inch pan. Bake 30 – 35 minutes. Cut into bars. Sprinkle with powdered sugar. Makes 32 bars 1×2 inches. Note: Make sure you buy dates that have had their pits removed. It makes chopping them much easier.
