Porcupine Meatballs

This is a cute dish for kids. Show them how the grains of rice expand as the meatballs cook.

Porcupine Meatballs (a la my friend Sue Brown)

1 lb ground beef
1 can Cream of Mushroom Soup
1/2 c uncooked rice
Dash black pepper
1/2 can milk or water

Mix soup & water, add pepper. Add 1/2 c mixture to beef & rice. Form into balls. Place in frying pan. Pour rest of mixture over all. Simmer on medium high. Turn down & simmer 20 minutes. Don’t stir (or the rice will break up from the meatballs).
